This is Digby Pancake. What noises do you make when you are happy? Do you howl like me?
Do you pretend you are mad and groan like Brickle because you cannot show that you are happy?

Or do you bubble and squeak?
Bubble and squeak. Not sure I have ever thought that I would have an opportunity to do that. But when Girl Person made Brickle and I a new dish called Bubble and Squeak, I knew that I had to give it a try.
I knew that when I ate it, I would be bubbling. And I would be squeaking. Because it was so good.

When was the last time that you tried a new dish? A new flavor? A new food from a different place?
Since all of us have to stay at home more, when is a better time to try a new food and learn about a new place like now?

For our family, sometimes, we pull the name of a random country out of a hat and we have to learn about that country’s food and that country’s people.
We call it traveling by fork!
This week, we decided that we would give England a go. And since I am a rescue English Foxhound, it seemed perfect!
But since we are camping, we knew we wanted to make a dish over the fire.
We knew it had to be simple. We knew it had to be dog-friendly and person friendly. And most important? We needed it to inspire happy noises when we ate it! So you guessed it! Bubble and Squeak it was!

Are you stuck in the same food choices? If variety is the spice of life, isn’t dinner getting a little bland? It may be more work to make a recipe from another place. It may be more work to find the ingredients. It may be more work to learn how individuals truly live somewhere else. And you may think that dinner isn’t worth all of that. Then what is?

There is nothing better than getting outside our comfort zone, even when we have to stay home. New activities and projects like cooking can not only keep our bodies busy, but our minds busy too.
Imagine if someone from another place wanted to learn about you and where you live. What would you tell them to cook? What do you think that they would like? What happy noises would they make?
Camping is our way of life. But so is growing…and not just our bellies, but our views. Growing not just our tastebuds, but our tolerance of the differences in others which can turn into appreciation. Never underestimate how much there is to truly taste! And let’s start with you making something new!
2 Traveling Dogs Person and Dog-Friendly Bubble and Squeak
Ingredients
3 tablespoons olive oil
1/2 cup celery (finely chopped)
1 pound mashed sweet or regular potatoes (about 2 cups)
1 cup leftover vegetables that are dog-friendly (like cabbage, kale, peas, cooked carrots, and/or cooked Brussels sprouts; finely chopped)
Optional: bacon pieces (turkey bacon is lower in fat for dogs, or if you are vegan like our persons, leave out!)
Optional topping: Scrambled or poached egg

In a large pan, heat the oil over medium heat or a campfire that has burned down. Add the finely chopped celery and sauté gently for about 3 minutes or until soft and translucent. Turn the heat up slightly if using your stove or just keep cooking directly on the campfire coals. Add the mashed potato and all of the chopped up leftover vegetables. Add the chopped meat, if using. Sauté’ for at least 10 minutes, turning everything over continuously to make sure that the potato and vegetables are thoroughly reheated. When the mixture is heated through, give the vegetables one long final press onto the base of the pan with a spatula and leave to cook for 1 minute. Flip over and repeat. Season with salt and pepper for the persons. It’s optional to serve with either a scrambled or poached egg on top.
