This is Fruitycake The Raccoon. I’ve never worried so much about a menu. Life has given me plenty that I haven’t ordered. Some of it has been delicious.
Some if it has been not good at all.
But one thing is for sure. I haven’t turned down many things handed to me. However, I have turned over many trash cans in my life too.

But when Brickle and I heard that Girl Person was making a pie, I got excited.
But Brickle said not so fast. He saw spinach on the counter. And it was going in that pie.
It was going to be a spinach pie. A spinach pie?


All of a sudden I was wishing for that menu of life. That menu of life that gave me a choice between a spinach pie and just any other kind of pie.
But when Girl Person took it out of the oven, and I smelled it, I knew both Brickle and I had been wrong. Very wrong.
This was a pie we would like a bite of. And oh. We got a bite. And it. Was. Delicious. Who knew spinach pie would be a new favorite?

In life, we may be faced with unexpected happenings. We may wish we didn’t get these surprises. We didn’t plan for them. We didn’t want them. We just didn’t.

But then, the menu of life has a way of surprising us with something we may actually love.
So keep you heart open. Keep your menu open. And remember a pie is a pie. And it is delicious.

I like to make (and I love to eat) a Greek spinach pie. It’s called Spanakopita. I made some for a family gathering in early December, then more (upon request of some people in the family) for Christmas. There are several different recipes for it, and I adapted a little. One I made with Pepperidge Farms frozen puff pastry, the other with phyllo dough. Phyllo is harder to work with, and after making the pie with each one, I decided I actually liked the one made with the Pepperidge Farms puff pastry better. And it was a lot easier to work with. The hard part is chopping up all the spinach, onions, parsley, garlic… lots of chopping. But I really do love the pie, and I know I’ll be making more. The one thing I saw in the Italian version that I don’t care for is parmesan cheese. I probably would still make it will feta and ricotta. Or mozzarella. But, yes, spinach pie is a pretty good pie. Hey! Maybe next time I’ll make the homemade pie crust I make for fruit pies. That might be pretty good, too!
