The Proof Is In The Acorn Squash Pudding

This is Digby Pancake. You could say, and you would be right, that I know my sweets.

You could say, and you would be right, that I am sweet.

But you could also say, and you would be right, that I’ve never had pudding. I’ve heard of it. I’ve dreamt of it. But shockingly, I’ve never had the privilege of putting it in my mouth. And I can’t say that about much.

So when Girl Person said that she wanted to make a pudding, I was excited!

She said me and Brickle could have some too. And I was even more excited. Until she started pulling out fruits. And vegetables. And strange looking vegetables she got.

And then? I was questioning my longing for pudding. Perhaps, this just wasn’t meant to be.

She told me and Brickle to check it out. And when she says to check something out, usually her excitement is to be questioned. Its usually something strange. New. Or a pill I don’t want to take.

But this thing she told us was an acorn squash. Now. I know what an acorn is. In fact, Brickle tried to eat so many of them when he was a puppy that his name was almost acorn. And this didn’t look like an acorn.

Nope. It was green. And weird. And to think this would magically turn into pudding was highly doubtful. Highly.

But in our new RV kitchen, Girl Person thinks she can do anything. And she went to creating.

She roasted the acorn squash, she mixed some stuff up, she twirled around like Tinkerbell, and before we knew it, we had pudding.

I was still doubtful this would be good. And I’ve raided a litter box before. Did I say that?

Yes. This seemed like a bad idea. But as with anything, I’ll try it once. Or twice just to make sure. And the first bite? I was scared. The second bite? I was less scared and more intrigued. And the third bite? I wanted it all. All of the acorn squash pudding.

Aren’t people like that sometimes? We think we know them. We think that we know all about them. We have people we like a lot.

And people that are harder to get to know. So we stick to our favorites. It sure is less work that way.

But people are made up of much more than we know. Give someone a chance to be your friend that may be different from you. Give someone a chance to prove themselves to you, even if you have heard otherwise about them. Don’t take for granted they are like a hard gourd!

Make up your own mind.

The proof is in the pudding.

The proof that friendship is worth trying for and fighting for is when you find that one friend you’ve known was out there all your life.

Don’t stop trying to find a true friend.

Even if you’ve had a bad taste in your mouth before.

2 Traveling Dogs Savory Acorn Squash Pudding For Dogs And People

2 acorn squash

1/4 cup milk (we like oat milk)

1 tablespoon cinnamon

1 tablespoon olive oil or butter (we like Miyokos Vegan Butter)

1 teaspoon pepper

1 teaspoon salt

1 cup cheddar cheese ( we like vegan Miyokos cheddar)

Cut your squash and roast at 400 degrees for one hour. Let cool and scoop out seeds and peel. Mash with all ingredients and mix together. Put in a casserole dish and bake with extra cheese on top for half an hour. Let cool completely before serving to your dog.
