Chicken Cacciatore For Dogs and People To Share
1 pound of organic, boneless chicken thighs or breasts
8 ounces of organic diced tomatoes (no salt added)
1 diced, organic bell pepper
1 tablespoon organic olive oil
1 tablespoon dried, organic oregano
1 tablespoon diced, fresh basil for garnish
1 cup of cooked, organic brown rice
Preheat your oven to 375 degrees. Spray a deep, glass pan with non-stick cooking spray. Place chicken in pan, top with bell pepper and diced tomatoes. Sprinkle with olive oil and oregano, cover and bake for 50 minutes. Let cool completely.
Serve each thigh or chicken breast over a cup of brown rice with the sauce. Sprinkle with fresh basil! Serve!
Leftovers may be refrigerated for up to two days or frozen for up to two months in an airtight container.
