Brickle’s Blueberry Maine Pie For Dogs And People (Gluten Free)

You probably think of a few foods when you think of Maine and New England. Lobster and seafood are plentiful, but so are wild, fresh, delicious blueberries! Stop on the side of the road and pick up a pie from many of the local stands or shacks offering this treat!


On our trip, we just had to make our boys a dog friendly version. Of course you can share and you will be able to enjoy the taste of blueberries without added sugar. We have also used olive oil in this version in the place of butter. Simplicity is best, gluten-free and dog-friendly too! This makes a whole, real pie for your dog so please use portion control. This may be frozen for up to three months.

Crust Ingredients
1 1/4 cups brown or white rice flour
1/2 cup sweet rice flour
1/2 cup tapioca starch or flour
1 cup olive oil
6 tablespoons water
1 tablespoon apple cider vinegar
Filling Ingredients
3/4 cup local honey
5 tablespoons tapioca starch
2 tablespoons sweet rice flour
7 cups blueberries, washed and picked through
3 tablespoons olive oil
Instructions
In a large bowl, whisk together the brown rice flour, sweet rice flour, and tapioca starch. Using your hands, mix in olive oil until it resembles a coarse meal. Add water and vinegar. Stir with a wooden spoon until dough forms. If the dough is dry, add water a tablespoon at a time. Pat dough into a rectangle and wrap tightly in plastic wrap. Chill for one hour.
Preheat oven to 425 degrees.
Cut dough into two equal size pieces. Return one of the pieces to the fridge. Dust a working area with flour and roll out the dough into a 13 inch circle. Transfer to a 9 inch pie pan. Place the pie pan in the fridge while you make the filling.
In a large bowl, combine the honey, cornstarch, and sweet rice flour. Stir and add the blueberries. Remove the pan from the fridge and add the blueberry mixture. Roll out the remaining dough as before. Top the berry mixture with this dough. Brush with egg. Cut several slits in the pasty which allows the steam to vent. Place the pie on a rimmed baking sheet and bake until the crust is golden brown, about 45 minutes
Allow pie to cool at least four hours before serving. Serve your dog pie at room temperature. Never feed hot food to your dog.
