If you know our boy, Peanut Butter Brickle, you KNOW he loves peanut butter. One of the most popular Utah recipes are fried scones! Yes. Fried. Scones. What are scones? Oh, just a lump of goodness. But dogs should never have fried food. So how could we make this recipe dog friendly? We baked these scones, and used olive oil in place of butter. Even though this version is healthier than the Utah people version, it is still a little high in calories. So limit portion size and enjoy! Can you share? What a question.
Ingredients
1 1/2 cups organic rye flour
1 1/2 cups organic all purpose flour
2 teaspoons baking powder
1 egg
4 tablespoons organic, unsweetened peanut butter
2 tablespoons local honey
2 tablespoons olive oil
3/4 cup organic milk
Directions
Preheat your oven to 400 degrees and spray a non-stick pan with cooking spray.
Mix all dry ingredients together in a bowl. Set aside. Mix all wet ingredients together in a separate bowl and add to the dry ingredients. Mix just until blended and either shape into a loaf, cutting eight slices, OR form into eight balls, spaced about an inch apart on the pan. Bake for 20 minutes. Remove from the oven and let cool on counter. Serve and enjoy!
Make be refrigerated for up to 4 days or frozen for up to 3 months in an airtight container.
